Inspector notes: (Chix salad, tuna salad, breaded chicken, and boiled eggs) were observed held at (48-50) degrees Fahrenheit at the salad bar self service area. The ambient was observed at 40 degrees Fahrenheit. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per interview of staff TCS foods were placed at self-service salad bar less than 2 hours prior to this inspection. Proper cold holding of TCS foods reviewed. Staff moved TCS foods to W/I cooler to rapidly cool during this inspection. -Inspector suggested storing the foods in a deeper pan rather than the shallow pans.

(Potato salad) was observed at 45-46 degrees Fahrenheit (still cooling) and covered with a plastic wrap in W/I cooler.
