Inspector notes: Proper cooling methods were not used for time/temperature control for safety (TCS) foods. Chicken stock, vegetable stock, and potato soup were placed hot in the walk-in cooler covered with a plastic wrap and a lid over it. -Chicken stock observed at 49 degrees Fahrenheit, vegetable stock observed at 79 degrees Fahrenheit, and potato soup observed at 57 degrees Fahrenheit. -Per PIC, vegetable soup was cooled down 1 hour prior to this inspection. Proper cooling methods reviewed. -Staff removed the lid and plastic wrap from the containers to allow for rapid cooling in the walk-in cooler. The vegetable soup was moved to the walk-in freezer to allow for rapid cooling. -Vegetable soup was observed at 64 degrees Fahrenheit 30 minutes after the initial observation. -Establishment shall keep a cooling log for foods in the cooling process. -Cooling log must be maintained for 1 week and emailed to inspector. -Cooling log provided to establishment at the time of this inspection.
