Inspector notes: Milk and cream were observed held at 47-48 degrees Fahrenheit in the canisters at time of inspection. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per person in charge, both had been out of refrigeration for about 1 hour. Milk and cream were relocated to the walk-in cooler to cool.
