Inspector notes: Proper cooling methods were not used for time/temperature control for safety (TCS) foods. Observed tuna in plastic container greater than four inches deep and pans of sliced tomatoes covered with layers of plastic wrap at 52-54 degrees Fahrenheit in the walk-in cooler. Per PIC, tuna and sliced tomatoes were prepped 1-2 hours prior to inspection. Proper cooling methods reviewed. PIC removed the covers and moved TCS foods to walk-in freezer to rapidly cool during this inspection. Establishment shall keep a cooling log to make sure TCS foods are cooled properly. Cooling log must be completed and provided to inspector upon the next re-inspection date. Cooling log provided to establishment at time of inspection.
