Except when combined as ingredients, different types of raw animal foods must be separated from each other during storage by using separate equipment or arranging each type of food in equipment so that cross contamination of one type with another is prevented. Chicken was observed stored above pork. Items relocated.

Inspector notes: Chlorine sanitizer solution was observed in excess of 100 parts per million (ppm). A chlorine sanitizer solution applied to food contact surfaces must be between 50-100 ppm. PIC called dish machine company at the time of inspection to adjust dish washer. Technician stated that they will service unit tomorrow morning. All dishes/utensils to go through 3-bay sink sanitizer until unit is serviced and tested to be adequate ppm.
