Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per person in charge, sushi was transferred to the open-air cooler about 2 hours ago. Sushi was relocated to freezer to rapidly cool.

Tuna was observed stored at 37 degrees Fahrenheit during time of inspection. Tuna was removed from the package during time of inspection.
