Inspector notes: Proper cooling methods were not used for time/temperature control for safety (TCS) foods. Sushi was observed cooling in the sushi display case. Sushi display case is inadequate for cooling. Per person in charge, sushi was prepared about 1.5 hours prior to inspection. Sushi was transferred to the freezer to rapidly cool. Sushi was cooled to 31-35 degrees Fahrenheit within 20 minutes of transfer. Establishment must not use sushi display case to cool food. Inspector called manager and manger said sushi is supposed to be cooled in the freezer or walk-in cooler and that they will not cool in the sushi display case.
