Inspector notes: Proper cooling methods were not used for time/temperature control for safety (TCS) foods. 1) Popcorn chicken was placed hot in the refrigerator and covered. Lid was removed and food moved to walk-in freezer to rapidly cool. 2) Popcorn chicken was placed hot in clam shell containers with salads and placed in the walk-in cooler with the container closed and stacked on top of each other. Proper cooling procedures reviewed with PIC and staff at the time of inspection.
