According to the manufacturer's use directions, the concentration of the quaternary ammonium must be 200-400 ppm. PIC of the meat department was able to correct the sanitizer level at the time of inspection. Per the PIC, call was made for service.

Food items prepared on site are to be cooled to 41 degrees Fahrenheit or below prior to being placed in display cooler. PIC removed the paninis and placed them in the blast chiller for rapid cooling at the time of inspection.

(Paper towel dispensers were reloaded at the time of inspection.)
