Inspector notes: The drain to the sanitizer bay of the 3-bay sink in the dish machine room was observed to be leaking onto the floor. (Plumbing system is to be maintained in good repair. PIC made call for service at time of inspection.)

Inspector notes: The quaternary ammonium concentration in the sanitizing solution of the 3-bay sink at the Meat Department was 0 parts per million (ppm). According to the manufacturer's use directions, the concentration of the quaternary ammonium must be 200-400 ppm. PIC of the meat department was able to correct the sanitizer level at the time of inspection. Per the PIC, call was made for service.

Inspector notes: At the time of inspection, paninis made on site same day were observed at 46 to 47 degrees Fahrenheit. Food items prepared on site are to be cooled to 41 degrees Fahrenheit or below prior to being placed in display cooler. PIC removed the paninis and placed them in the blast chiller for rapid cooling at the time of inspection.

Inspector notes: Food contact surfaces of several clean knives in the kitchen prep room were observed with an accumulation of debris. The food contact surfaces of equipment must be clean to sight and touch. Knives were removed and sent to the dish area for proper cleaning at the time of inspection.

Shellfish tags must be maintained for 90 days in chronological order and the date when the last shellfish was used from the bag must be noted on the shellfish tag. Employee began reorganizing the tags at the time of inspection.

Inspector notes: At the time of inspection, rolls of paper towels were observed stored on prep surfaces in the Produce and Fruit Prep rooms (Hand Sink Paper Towel Dispensers were observed empty). Paper towel dispensers are to be refilled when needed and paper towels are not to be left on prep surfaces to avoid possible contamination of prep surfaces at times of use. (Paper towel dispensers were reloaded at the time of inspection.)
