Time/temperature control for safety (TCS) food must be maintained at 135 degrees Fahrenheit or above except during preparation, cooking, or cooling. Based on temperature and time of preparation, sandwiches were pulled for cooling. (Per the PIC, chicken sandwiches will no longer be held on the hot hold shelving until better solution devised.)
