Per the PIC, the beverage company is due to move the unit so thorough cleaning can be completed. The physical facilities shall be cleaned as often as necessary to keep them clean.

Inspector notes: Meatballs, which was previously cooked and cooled, was only reheated to 109 degrees Fahrenheit for hot holding. Time/temperature control for safety (TCS) food that is cooked, cooled, and reheated for hot holding must be reheated to 165 degrees Fahrenheit or above for 15 seconds. Meatballs were microwaved to above 165. Per area manager, hot hold unit should be set to 10 to reheat food above 165. Hot hold unit was only set to 7. Establishment to monitor reheating temperatures to ensure food is properly reheated.
