Inspector notes: Carrots, bratwurst, chicken, rice, pasta, and shepherds pie which was prepared in advance, was not cooled to 70 degrees Fahrenheit in 2 hours and then to 41 degrees Fahrenheit within 4 hours. Food was observed between 50-45 DF. Food was voluntarily disposed of at the time of inspection. Proper cooling methods reviewed with staff.

Walk-in cooler was observed turned off for maintenance work with food still in cooler. Per PIC, walk-in cooler was turned off for approximately 2 hours. Deli meat and cheese was moved at the time of inspection. Cheese was observed at 55 DF and voluntarily disposed of at the time of inspection. Walk-in cooler was turned on and observed at 37 DF. 2 door reach-in was observed held at 44 degrees Fahrenheit. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. All food in unit was moved to walk-in cooler at the time of inspection. Establishment is not to store any TCS foods in unit until unit is able to hold an ambient temperature of 41 DF or less.
