Inspector notes: coffee creamers were observed on the table out of temp. control. The label says keep refrigerated and observed at 70 degrees at time of inspection. Per PIC coffee creamers were put out 1 hour prior to this inspection. Since creamer was out of temp. control less than 4 hours PIC was directed to place creamers in refrigerator. -Time as a public health control reviewed. Establishment is not approved to use time as a control for coffee creamers. Per PIC he will start using shelf stable containers instead. Establishment will discontinue leaving TCS coffee creamers out in room temp.

Per person in charge, eggs and ricotta cheese were placed in the refrigerator about a half hour prior to inspection. Pooled eggs and ricotta cheese were relocated to another refrigeration unit during time of inspection. The ambient air temperature was observed at 47 during time of inspection.
