Inspector notes: Pastel Filling, which was prepared in advance 5/7/24, was not cooled to 70 degrees Fahrenheit in 2 hours and then to 41 degrees Fahrenheit within 4 hours. Food was being cooled in hotel pan that was to deep. Corrective Action - Filling was disposed of. Establishment to cool filling on baking sheets in walk in moving forward.
