Inspector notes: Chowder and Meatballs, which were previously cooked and cooled, were placed in the hot hold steam unit and observed only reheated to 114 and 123 degrees Fahrenheit respectively for hot holding. Time/temperature control for safety (TCS) food that is cooked, cooled, and reheated for hot holding must be rapidly reheated to 165 degrees Fahrenheit or above for 15 seconds. PIC placed food items on the cooktop and rapidly reheated to 165 degrees Fahrenheit at the time of inspection.

Inspector notes: Several food items in the walk-in cooler were observed held at 44 - 45 degrees Fahrenheit (unit ambient temperature observed at 53 degrees Fahrenheit). Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per the PIC, food items were recently delivered and moved to colder refrigeration at the time of inspection.

Inspector notes: Per the PIC, poultry (Chicken Wings) were partially cooked to 145 degrees Fahrenheit prior to cooling and storing in refrigeration. Poultry must be cooked to 165 degrees Fahrenheit or above for 15 seconds. Chicken wings were fully cooked at the time of inspection as corrective action. PIC is to submit request for approval to RIDOH CFP Supervisor to perform partial cooking of chicken wings. PIC is to discontinue partial cooking of items until granted approval from RIDOH CFP Supervisor.

During pauses in food preparation, utensils must be stored on a clean surface or in a clean, protected location to prevent possible contamination. Inspector notes: At the time of inspection, the Walk-In Cooler was observed to be in need of repair/adjustment. The unit was observed to be maintaining an ambient temperature of 53 degrees Fahrenheit with a large buildup of ice on the condenser unit. Food items were moved to colder refrigeration for proper storage at the time of inspection. PIC immediately began to defrost unit. Walk-In Cooler is not to be used for storage of TCS Foods until repaired/adjusted and properly maintaining an ambient temperature of 41 degrees Fahrenheit or below.
