Inspector notes: The quaternary ammonium concentration in the sanitizing solution of the 3-bay sink was <150 parts per million (ppm). According to the manufacturer's use directions, the concentration of the quaternary ammonium must be 150-400 ppm. PIC stated they were aware of issue and has placed an order to get sanitizer dispenser serviced. Until sanitizer dispenser is serviced, establishment must manually add sanitizer and test to ensure it is an adequate ppm. PIC to instruct staff of procedures moving forward. PIC added more sanitizer to 3-bay at the time of inspection.

Establishment shall no longer use time as a control for ham. Inspector printed out approval letter for other ingredients. Establishment to keep letter in store. PIC to instruct all staff that time may no longer be used for ham. Ham must be stored 41 degrees or below.
