Inspector notes: At the time of inspection, the following equipment was observed in need of repair/adjustment... - The food disposal located under the pre-flush sink at the dish machine was observed to be clogging and not draining properly. Per maintenance staff, new unit is on site and due to be installed as soon as possible. - The high temp dish machine was observed to be losing wash cycle pressure while in continuous use (per the PIC, a workorder has been written and plans for repair/replacement are in process). PIC is to ensure all equipment/utensils are properly checked for thorough cleaning of food debris and rewashed if needed. Equipment is to be maintained in good repair.

Inspector notes: Cut Chicken Strips was observed held at 110-124 degrees Fahrenheit in the service line steam unit and hot hold cabinet (per the PIC, chicken cooled down during the prep process adding bbq sauce). Time/temperature control for safety (TCS) food must be maintained at 135 degrees Fahrenheit or above except during preparation, cooking, or cooling. Chicken was properly reheated at the time of inspection.

Inspector notes: At the time of inspection, a ceiling light shield over the food service line area was observed with dripping/pooling water (raining at time of inspection). At the time of inspection, water was NOT observed to be dripping from the light shield onto the food service line or affecting any foods or food safety. PIC to ensure no food is stored for service on the service line under or near any possible dripping water from the ceiling/light during rain, snow, and/or snow melt events until ceiling or roof is properly repaired and preventing any leaks. (Per maintenance staff, future plans are in place for future repairs)

Dish machine was observed properly sanitizing as indicated by thermo-label test strip. Pressure gauge to be replaced/repaired. - - The high temp dish machine was observed to be losing wash cycle pressure while in continuous use (per the PIC, a workorder is in place for service within 2 weeks of inspection). PIC is to ensure all equipment/utensils are properly check for thorough cleaning of food debris and rewashed if needed. Equipment is to be maintained in good repair.
