Inspector notes: Food items prepped same day for breakfast and lunch (egg omelet, egg omelet puree, and potato puree were observed cooling in the 2-door reach-in cooler in covered plastic containers greater than 4 inches deep at 143-, 88-, and 94-degrees Fahrenheit respectively. Food items were switched to shallow metal pans and placed in the walk-in cooler for rapid cooling at the time of inspection. Strategies for proper cooling methods were reviewed with the PIC at the time of inspection.

Inspector notes: At the time of inspection, the following equipment were observed to be in need of repair, adjustment, or replacement: - The mixer machine nearest the walk-in cooler was observed to have oil dripped onto the plastic wrapped bowl from the upper mixing rotating apparatus. Per the PIC, the mixer is not used very often. Kitchen staff to use different mixer unit until repaired/replaced. - Plastic food storage pans were observed to be cracked and/or chipped. Plastic storage pan(s) disposed of at the time of inspection. - A knife was observed to have a cracked/chipped handle. Knife is to be taken out of service for use with food. - The flow pressure of the fresh hot water sanitizing rinse (PSI) was not between 15-25 PSI as required. System Pressure Dial observed at 43 PSI at the time of the sanitizing cycle. PSI is to be adjusted to appropriate level of 15-25 PSI as required for proper high temperature sanitization. (Per the High Temperature Thermo-label used at the time of inspection, proper sanitization of equipment was observed.)
