Turkey and Cheese were observed stacked above the cold zone in the top area of the cooler. Upper Portions of food items were moved for proper cold holding.

Based on time and temperature control, several food items were moved to colder refrigeration, and several food items were voluntarily disposed of by the PIC at the time of inspection (See Disposal).

Inspector notes: At the time of inspection, Sliced Baked Mozzarella was observed cooling, at 72 degrees Fahrenheit, in a container greater than four inches deep. Based on the time of preparation and temperature, Sliced Baked Mozzarella was spread out onto a sheet pan and placed into the walk-in cooler for proper cooling.
