Inspector notes: Various items in the cookline prep unit near the fryolator was observed held between 47-56 degrees Fahrenheit. The unit was observed maintaining an ambient of 53 degrees Fahrenheit. Butter observed on the counter held at 50 degrees Fahrenheit and moved to refrigeration. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Items were in the unit under 2 hours at the time of inspection and moved to refrigeration to rapidly cool. Maintenance service preformed at the time of inspection.
