Per PIC soups/sauces were recently cooked(Withing one hour) and were removed from ice bath. (Ice bath was observed upon arrival.) Food was removed from ice bath too soon in the cooling process. Proper cooling methods reviewed with PIC. Cooling methods handout provided. All containers were placed back in ice bath or into shallow containers. PIC placed multiple ice wands in containers of food and created new ice bath.
