The deli display coolers were observed maintaining an ambient temperature between 40-50 degrees Fahrenheit. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per interview with person in charge, several items were just placed in the unit an hour prior to inspection. Food that was placed in the unit an hour prior were moved to the walk-in cooler. All items that were in the unit for over 4 hours were voluntarily disposed of by the person in charge.
