Time/temperature control for safety (TCS) food must be maintained at 135 degrees Fahrenheit or above except during preparation, cooking, or cooling. Per person in charge, cheeseburger was cooked about an hour prior to inspection. Person in charge elected to dispose the cheeseburger (see attached disposal form). The ambient air temperature was observed at 132 degrees Fahrenheit during time of inspection. The ambient air temperature was adjusted and observed at 151 degrees Fahrenheit after adjustment at time of inspection.

Food was reheated to 140-155 during time of inspection . The ambient air temperature was observed at 115 during time of visit. The temperature setting was increased during time of visit and reached 153. Establishment must set the temperature to at least 135 degrees or above. In addition, hot hold unit must be preheated to at least 135 before food is placed in the hot hold unit. Temperatures must be monitored.
