Inspector notes: Observed several white bins full of cooling fries (98-123°F) sitting out at room temperature. Alerted the manager who stated the batch of fries had been fried 45 minutes before the temperature measurement. Staff immediately moved all the bins of cooling fries into the walk-in to cool underneath the blower. Discussed the importance of switching to ACTIVE COOLING once fries reach 135°F to facilitate rapid cooling through the danger zone (135-41°F). Fries must be ACTIVELY COOLED from 135°F to 70°F within the first two hours and then from 70°F to 41°F within the next 4 hours. Total cooling time must not exceed 6 hours. Discussed active cooling methods with the manager and provided a cooling log
