Inspector notes: Observed 2-door standing refrigerator operating at 52.7'F via min/max thermometer at time of inspection. All improperly cold-held TCS foods within the unit were willingly discarded at time of inspection. Discussed the importance of routine checks for all temperature controlled units on site with PIC. Establishment will discontinue use of 2-door standing refrigerator and utilize alternative refrigeration until repairs are made and unit is capable of maintaining all TCS foods at or below 41'F.
