Inspector notes: Observed birria consume 55*F-56*F with 3/31 date mark in covered, deep container greater than 4" the walk in cooler at the time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. PIC provided incomplete cooling log from the previous day with final temperature at 4pm recorded as 55*F. Per employee, TCS consume was cooled with an ice wand the previous day until 4pm then ice wand was taken out of product before the cooling process was complete. All TCS foods improperly cooled were discarded by PIC at time of inspection

Additionally observed behind bar next to handwash sink and next to dishwashing machine spoons and muddlers being stored in water wells with the water turned off. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection
