Sanitizing MUST be done in commercial settings to destroy pathogens that may remain on surfaces after cleaning

Inspector notes: Observed boba (72°F) sitting out at room temperature without a discard time sticker. The time control policy requires a sticker indicating the discard time to be affixed to the time control boba. Alerted the manager, who added the time control sticker at time of inspection. These stickers MUST be added after cooking, before the boba cools to below 135°F. The boba had been out for a little over two hours. Discussed the importance of following the time control procedure to ensure time-controlled foods are discarded at the correct times

Inspector notes: Observed no paper towels readily available at either hand-washing sink. Both of the automatic paper towel dispensers are locked and not dispensing paper towels. The manager stated that they typically use a paper towel roll a few steps away from the hand-washing sink in the front of the establishment. Staff placed a roll of paper towels at each sink at the time of inspection. Reviewed requirements for hand-washing sinks. Everything is to be available within reach.
