Inspector notes: Observed three small covered metal containers of chopped cooked pork (68-74°F) sitting in the walk in. Alerted manager who stated they put the pork int the walk in to cool a little under 2 hours prior. The containers were immediately uncovered to aid in rapid cooling. Cooling foods to remain uncovered until they reach 41°F. Time Temperature Control for Safety (TCS) foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.
