Inspector notes: -- In walk in refrigerator, observed the following RTE TCS items date mark labeled: ceviche (7/2/25), rolled beef tacos, (7/3/25), pico de gallo (7/3/25),containers of green salsa (6/28/25), pork carnitas (no date), green chili with beef (no date), cooked red chicken (no date), beef birria (no date). The person in charge stated the rolled beef tacos and green salsa was prepared on 7/7/25, they were unsure when the pork carnitas were prepared, and the green chili with beef, cooked red chicken, and beef birria was all prepared 5-7 days prior to the inspection. All RTE/TCS foods past 7 days of preparation (pico de gallo, pork carnitas, ceviche) were discarded by PIC at the time of inspection. All RTE/TCS foods that had been prepared within 7 days or less (rolled tacos, green salsa, green chili beef, cooked red chicken, beef birria) were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1)
