Inspector notes: Observed raw chicken in a metal bowl stored directly over raw beef and pork in the walk-in cooler. Also observed raw eggs over bottled water and ready-to-eat pico de gallo stored in the walk-in cooler. Also observed boxed chicken stacked on top of raw pork and beef in the walk-in cooler. Discussed proper food storage with PIC. Provided proper food storage guidance documents via email at time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code

Inspector notes: Observed fully cooked beef head soup (75-77'F) in the cooling process being stored in the walk-in cooler at time of inspection. The soup was being stored in a deep metal cambro with a depth exceeding 4 inches, and placed on the lower shelf of the metal storage rack which was not receiving adequate air flow. Per PIC, the soup was placed in the cooler at 10:30am, about 4 hours prior to inspection. Discussed proper cooling parameters with PIC. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection

Explained the importance of maintaining a functional thermometer for verify adequate cooking temperatures on-site at all times. Instructed PIC to purchase a new probe thermometer prior to reinspection. Properly calibrated probe thermometers are required at all times for monitoring food temperatures.
