The shelves are used to stored covered containers of food as well as uncovered, cooling foods. Food was uncovered and cooling at time of inspection. Informed PIC that the rust and old food debris has the chance to contaminate food, and to avoid this, the shelves need to be cleaned and brought back into good repair or replaced.
