Inspector notes: Observed 0ppm of QUAT sanitizer in the three compartment sink that was actively sanitizing metal pans. PIC drained the water in the sanitizing compartment. A small pan of sanitizing solution from the dispenser was re-tested and concentration of QUAT did not change. PIC stated that a work order will be placed and that they will manually mix the QUAT solution for sanitizing dishes. Food-contact surfaces must be properly sanitized after washing and rinsing. Food-contact surfaces sanitized using quaternary ammonia must be sanitized with a contact time according to manufacturers specifications
