Inspector notes: -- In hot holding warming cabinet, observed container of nacho cheese with internal temperatures ranging between 95°F-117°F. All other TCS items in unit hot holding at 135°F. The person in charge stated the cheese was heated in the rethermalizer and placed in cabinet approximately 1 hour before the inspection. The nacho cheese was placed back in the rethermalizer to reheat to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above
