Inspector notes: Observed lobster bisque dated 8/19 and tomato cream sauce dated 8/24 in the reach in cooler. After discussion with the chef, it was determined the lobster bisque and tomato cream sauce were prepared and frozen on the dates marked on their containers. The lobster bisque and tomato cream sauce were thawed in the refrigerator on 9/3. If ready to eat TCS foods are frozen, they should be labeled to include the date the food was prepared, the date the food was frozen, and the date the food was removed from the freezer to thaw in the refrigerator. The total time in the refrigerator cannot be more than 7 days. Observed alfredo sauce with no date mark in the reach in cooler. Observed sliced tomatoes in the prep cooler with no date mark. After discussion with the chef, it was determined the alfredo was prepared on 8/31 and the tomatoes were sliced on 8/31

Acceptable chlorine concentration shall measure between 50-100 PPM. Establishment will utilize the three-compartment sink to wash, rinse, and sanitize equipment, utensils, and food contact surfaces until the dish machine is repaired and maintains a chlorine concentration between 50-100 PPM.
