Inspector used personal test strips to verify that the sanitizer was at the appropriate concentration and the sanitizer solution was testing within the appropriate range of 150-400 parts per million for the quat sanitizer. Test strips are required for any sanitizers used with food contact surfaces. Provide sanitizer test strips prior to re-inspection. A re-inspection will occur within 10 days or no later than July 3rd, 2025

Inspector notes: Observed quaternary ammonium sanitizer concentration at the 3-compartment sink that was testing below the 150-400 parts per million required concentration for quat sanitizer. Observed that the sanitizer bottle was still half full but did not appear to be pulling the chemical into solution. Person in charged replaced the bottle with a new bottle and sanitizer was still dispensing at too low of a concentration. Person in charge reached out to a technician to service the 3-compartment sink. The hot water sanitizing dish machine was assessed using a min-max thermometer and the hot water temperature was 169°F. Discussed with person in charge to do the washing, rinsing and sanitizing in the dish machine or to do the washing and rinsing in the 3-compartment sink and then complete the sanitizing step in the dish machine. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels
