Inspector notes: Observed cartons of raw liquid eggs stored directly above ready-to-eat fruits such as strawberries and pineapple inside of the walk-in cooler. Person in charge relocated the cartons of raw eggs according to their final cooking temperature. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. Inspector notes: Observed no sanitizer testing strips available for the chlorine-sanitizing dishwasher in the kitchen or the chlorine-sanitizing dish washer at the bar. Inspector used personal test strips to verify that sanitizers were at the appropriate concentration and test strips indicated that the sanitizers were within the correct range of 50-100 parts per million for the chlorine sanitizer. Test strips are required for any sanitizers used with food contact surfaces. Provide sanitizer test strips prior to re-inspection.
