Inspector notes: Raw shrimp, raw salmon, raw ground beef, eggs, and raw chicken with internal temperatures between 50 degrees F and 52 degrees F were cold holding in a two-drawer cooler across from the grill. Ambient temperature of the unit was found to be 53.8 degrees F using a min/max thermometer. Kitchen associate stated that they would call a technician to look at the cooler. Establishment has sufficient cooler capacities to operate safely until the unit has been repaired. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection
