Inspector notes: Observed prep refrigerator on cook line measuring with an ambient temperature of 55 degrees F. TCS food items such as leafy greens, sauces, and sliced tomatoes measured with internal temperatures ranging between 51-53 degrees F. Per PIC, the refrigerator is emptied each night, and the items had been stored in there for less than 3 hours. The TCS food items were placed in an ice bath to rapidly cool to 41 degrees F or below. Discussed cold holding requirements. The prep refrigerator is required for flow of business- a re-inspection will be conducted within 10 days. The prep refrigerator will not be used to store TCS food items until in good repair. A temporary solution is in place to utilize ice baths for required TCS food items
