Inspector notes: Observed 0ppm chlorine sanitizer at the chemical dishwasher. Observed 140F max temperature after running multiple times. PIC stated they were unsure if the dishwasher was low or high temp sanitizing. Observed chlorine chemical test strips available. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels (50-100ppm chlorine sanitizer). PIC relocated all food-contact surfaces to manual warewashing area to be washed, rinsed, and sanitized at the time of inspection

Inspector notes: Observed cooling green chilis in a large, plastic container with more than 12 inches of cooling product. Observed internal temperatures ranging from 109-160*F when measured with a probe thermometer. PIC PIC, the chilis had been cooling for less than 1 hour. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. Also observed air cooling chilis that will be reheated throughout the day with parts holding under 135*F and the center >165*F. Advised PIC to discontinue air cooling for product that will be reheated and to maintain the chilis at 135*F or higher so the foods do not reach the danger zone. Advised PIC to cool unused portions and reheat as needed
