Facility switched to 3 compartment sink, and at 200 ppm quat at the present time. Ensure that dishwasher is always set at 50-100 ppm bleach during service

Staff said the foods had been out since 8am (4.5 hours ago) and they leave it out until 2pm when lunch is over, then put back in the fridge. Manager embargoed the food, and wants to change to having out for 1-2 hours, or keeping butter in the bottom fridge area. Ensure that TCS foods are not left out for more than 4 hours, are time stamped, and written policy in place for those foods
