Staff must dilute the sanitizer solution with water to the appropriate range (150 - 400 PPM). Alerted the Person in Charge, who placed a work order with their third-party sanitizer vendor. In the meantime, kitchen staff will dilute the sanitizing solution to the appropriate range, with water, until the dispenser can be serviced by EcoLab

Inspector notes: Observed boneless wings being held between 119*F-127*F at time of inspection in customer self-serve wing stand. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. PIC stated wings had come out of the oven one hour prior. All TCS foods improperly hot held were reheated to 165°F at time of inspection. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff verification breakdown, which resulted in the violation
