Inspector notes: In hot service case, observed two pans of chicken wings/113-131F. In customer grab and go case, observed hot dogs and chicken nuggets/125-128F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown which resulted in the violation. The cases were missing overhead heat bulbs. Per PIC, the TCS foods were all within safe time parameters. He chose to reheat the chicken wings to 165F, and voluntarily discarded the hot dogs and chicken nuggets. Staff was advised to discontinue using the cooler areas in the cases. The PIC indicated that new heat bulbs would be ordered immediately
