Inspector notes: Observed 0 ppm quat sanitizer at 3 compartment sink and at sanitizer buckets. Employee was sanitizing dishes with the sanitizer water at the 3 compartment sink. It was immediately tested at 0 ppm quat. Talked to staff about dishwashing policy. Manager refilled the sanitizer basin and was set at 200 ppm. Would recommend changing water out more often, and checking to ensure equipment is dispensing correctly. Ensure there is 150-400 ppm quat at sanitizer basin, and sanitizer buckets at all time
