Inspector notes: Observed dishes in the mechanical dishwasher in the kitchen with chlorine concentration of 0 ppm. Per PIC, bucket had been switched out this morning. Machine was primed and then after running a dishwasher cycle the final concentration was between 50 and 100 ppm. Discussed testing daily and priming the machine after switching buckets to ensure concentration is between 50 and 100 ppm

Inspector notes: Observed cooked garbanzo beans cooling in the walk in refrigerator at 86 degrees Fahrenheit. Beans were finished cooking at 1:00, 3 hours prior to inspection. Per PIC, beans had gone into an ice bath after cooking per procedure but must not have been in there long enough. Establishment did not have a cooling log for verification of times. Beans were discarded at the time of inspection. Cooked foods shall cool from 135 degrees Fahrenheit to 70 degrees F in 2 hours and from 70 to 41 or below in another 4 hours

Inspector notes: Observed dishes in the mechanical dishwasher with chlorine concentration less than 10 ppm. Solution in the bucket was still good, concentration was still less than 10 ppm after priming the machine. Employee who was warewashing filled the 3 compartment sink with quat sanitizer at 300 ppm to sanitize the dishes. Discussed checking the dishwasher daily to ensure the chlorine concentration is between 50 and 100 ppm
