Inspector notes: Observed at the three compartment basin, food worker staff washing the food cutting boards and utensils with water at the middle basin, and rinsing with water, placing the utensils, inside the final sanitizer basin. washed knives and utensils were carried and placed on storage racks. proper manual 3 compartment basin stages reviewed. please ensure staff conducting manual warewashing are filling the 3 basins as was, rinse, and sanitize, and then use the drying bords for airdrying for the final stage. manager will train staff on manual warewashing procedure

Inspector notes: Observed the outdoor trash receptacle unable to fully close due to being overfilled with trash. PIC stated the receptacle is shared-use. Advised PIC to arrange for more frequent pick up and to break large boxes down to help keep all trash below the rim of the bin. Advised PIC keeping lids shut can help reduce noxious odors and reduce pest harborage conditions
