Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Inspector notes: Using chlorine test strips, observed no chlorine in the final rinse of the in-use mechanical dishwashers in the kitchen and bar. The kitchen supply canister was empty, and the dispenser line was not in contact with the sanitizer in the bar. 50-100ppm chlorine was restored after new chlorine was supplied and dispensers were primed. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels

Inspector notes: In the pizza area warming cabinet/~100F, observed tomato sauce/108F, meatballs/122F, lasagna/120F and tomato sauce/108F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. It was determined that the TCS foods were within safe time holding parameters and were reheated to 165°F at time of inspection. PIC agreed to store the hot food in another unit and repair this unit as needed
