Inspector notes: In the walk-in cooler, observed chili/62F which had been prepared the day before. It was in a plastic container about 12 inches deep. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff and a verification breakdown which resulted in the violation. The cooling log and cooling procedures were reviewed. The improperly cooled chili was discarded by PIC at time of inspection
