Inspector notes: At front service counter hot line, cooked steak dish, cooked greens, top portion of teriyaki chicken with internal temperatures of 105*F-129*F. Internal temperatures were taken with both establishment and inspector probe thermometers. Per manager, steak, greens, and chicken were prepared within normal time parameters. Manager discarded steak and greens dishes for quality and moved teriyaki chicken to reheat to 165*F. Maintain TCS (time/ temperature control for food safety) foods at a hot holding temperature of 135*F or higher at all times
