Inspector notes: A low temperature dishwasher was observed with 0ppm of chlorine after final rinse. It was evident that dishes had been washed. PIC later realized that the sanitizer and detergent bottle feeding the dishwasher was empty and replaced them both at time of inspection. The dishwasher was primed and ran several times until it yielded proper sanitizer concentration between 50-100ppm (Used inspectors test strips). Discussed importance of monitoring sanitizer concentration to ensure dishes are being sanitized. Please maintain chlorine sanitizer at 50-100ppm
