Inspector notes: SECOND CONSECUTIVE. Observed dishes soaking in 25 PPM chlorine sanitizer. Staff stated they had changed the chlorine sanitizer within the last hour. Alerted the manager, who had staff remake the chlorine sanitizer to the correct concentration (50-100 PPM) at the time of inspection. All previously sanitized dishes were re-sanitized at time of inspection. Discussed the importance of correctly dosing the sanitizer concentration. Hand-dosed sanitizer concentration MUST be checked each time it is made

Inspector notes: Observed the three-compartment sink with chlorine measuring below 50 PPM. Upon refilling the sanitizer basin to the company specifications posted above the three-compartment sink, the chlorine concentration was still measuring well below 50 PPM. It was determined that the company had switched brands of bleach since the company guidelines had been posted. Different brands can come in different bleach concentrations. Chemical concentration must be measured each time the sanitizer compartment is hand dosed to ensure chemical concentration is within the recommended range. Discussed sanitizer requirements with management
